Kale Chips: healthy snack recipe

Kale is a form of cabbage that is related to broccoli and brussels sprouts, and is one of the most powerful healthy snacks you could eat. Kale is full of antioxidants and is rich in beta carotine, iron, Vitamin K, Vitamin C, and calcium. It also contains sulforaphane and indole-3-carbinol, chemicals that promote DNA repair and inhibit the growth of cancer cells.

Unfortunately, if you’re like me, you might not find this super food too terribly tasty. Since it’s such a healthy snack, I had to figure out a way to get it into my diet. Kale chips were perfect.

 Kale Chips Recipe


Preheat oven to 350 degrees.
Tear your kale into small, bite-sized pieces.
Thoroughly wash and dry your kale.
Coat the kale lightly with olive oil and toss to evenly cover each piece.
Separate each piece of kale and spread onto parchment paper.
Bake for about 12 minutes until the kale is crispy — very much like a potato chip.
Take your kale chips out of the oven and sprinkle with a bit of sea salt. The taste of the salt, kale, and olive oil combine quite wonderfully. The kale can get a bit soggy as it cools, so enjoy your kale chips warm. I find that a cup of tea and kale chips are perfect for a chilly night and a movie. Forego the popcorn and enjoy much more healthy snacks instead.





Wakame Carrot Dish Recipe

Wakame Carrot Dish


This is a very famous and healthy Japanese dish. 


1 cup wakame

1/2 onion, chopped

2 carrots, cut diagonally

olive oil

pinch cayenne or ginger

Directions

soak wakame until softened, then drain. chop into bits size pieces and remove any hard fronds. Saute onion in oil for about 2 minutes, until onion is softened. Add wakame and carrots and 1/4 cup water. Turn to low, cover the pot and simmer 15 to 20 minutes. Add in cayenne or ginger for some heat.

Serve with lemon or vinegar.

Mexican Bean and Rice Salad Recipe

An easy and simple Mexican rice salad recipe spiced up with flavorful and mouth-watering Mexican ingredients. This recipe yields 10- 11 servings.


Mexican Bean and Rice Salad

Ingredients

1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
2 cups cooked brown rice
1 (15.25 ounce) can whole kernel corn, drained
2 jalapeno peppers, seeded and diced
1 green bell pepper, diced
1 lime, zested and juiced
1/4 cup chopped cilantro leaves
1 small onion, diced
1 1/2 teaspoons ground cumin
1 teaspoon minced garlic
salt to taste

Directions

First, combine the brown rice, kidney beans, black beans, corn, onion, green pepper, jalapeno peppers, lime zest and juice, cilantro, garlic, and cumin in a large salad bowl.
And then, lightly toss all ingredients to mix well, and sprinkle with salt to taste.
Lastly, refrigerate salad for 1 hour, and then toss again.

Quick Chicken Divan Recipe


Quick Chicken Divan




A quick and easy chicken recipe mixed with tasty and delicious ingredients. Quick Chicken Divan is best served with steamed rice. This recipe yields 7- 8 servings.


Quick Chicken Divan Ingredients

2 cooked boneless chicken breast halves( chopped)
2 (10 ounce) packages frozen chopped broccoli
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 1/2 cups shredded Cheddar cheese
1 teaspoon lemon juice
1/2 cup mayonnaise

Directions

First, preheat oven to 350 degrees F (175 degrees C).
And then, place broccoli in the bottom of a 9×13 in baking dish. Top up with the chicken.
Next, blend the cream of chicken soup, cream of mushroom soup,  lemon juice and mayonnaise,  lemon juice in a small bowl. After that, pour the mixture over  chicken. and top with the Cheddar cheese.
Lastly, bake 35 to 40 minutes in the preheated oven, until bubbly and lightly browned.
Quick Chicken Divan is ready to serve!
